Small Business Institute
  The Small Business Institute provides small businesses in North Dakota with an opportunity to get low cost managerial assistance. Under the attentive supervision of faculty members, students working in small groups consult with the business owner(s) over the course of the semester. The student groups conduct research, develop alternative solutions, prepare a comprehensive report, and formally present this information to the owner at the end of the semester.

Value-Added Food Processing
  NDSU can be contacted about use of its pilot processing lab. This lab includes a variety of process capabilities. Sam Chang specializes in the chemistry, processing, product development, and nutritional values of soybeans and other food legumes including peas, lentils, chickpeas, pinto and navy beans. He also has worked with carrots, sunflower and sugarbeets. He has research experiences in soymilk and tofu making, canning, dehydration, gelling and many other processing methods.

Clifford Hall is a researcher in the Department of Cereal and Food Sciences. Research activities include the utilization of traditional and non-traditional commodities in food systems.
